Salad ingredients

  • Spinach is a leafy green vegetable high in fiber and is an excellent source of many vitamins and minerals, including Vitamin A, Vitamin C, Iron, Calcium, Magnesium, and Potassium.
  • Arugula has a peppery flavor that complements the sweetness of strawberries and oranges. It's rich in Vitamins A, C, and K, and is a great source of calcium, potassium, and folate.
  • Strawberries are rich in antioxidants, vitamins, and minerals, such as Vitamin C, Manganese, Folate, and Potassium. They are a good source of fiber. Not only are these berries delicious and rich in nutrients, but they are also beautiful and add color and brightness to any salad!
  • Oranges are rich in fiber, antioxidants, and Vitamin C.
  • Feta cheese adds tangy flavor and creaminess.
  • Almonds. I used thinly sliced almonds and toasted them briefly (about 5 minutes in the preheated oven at 350 F). The almonds should turn a rich golden color.

How to make salad dressing

You need only four ingredients: honey, Dijon mustard, olive oil, and lemon juice. (The recipe card at the bottom of this recipe post provides the full recipe and measurements.) I recommend using freshly squeezed lemon juice (not bottled) and extra virgin olive oil. Combine all dressing ingredients in a mason jar and whisk with a fork to emulsify.

  1. Combine spinach, arugula, sliced strawberries, sliced oranges, and crumbled feta cheese in a large bowl. Toss to combine.
  2. Make homemade dressing by combining honey, Dijon mustard, olive oil, and lemon juice in a mason jar and stirring with the fork until emulsified.
  3. Add salad dressing to the large bowl with the salad and toss to combine.
  4. Divide the salad among the individual serving bowls.
  5. Top each serving bowl with toasted sliced almonds.

Substitutions, variations, and add-ins

  • Use your favorite greens or a mix: arugula, spinach, mixed greens, lettuce, butter lettuce, etc.
  • You can use other nuts. I recommend toasted pecans, walnuts, or pine nuts. This salad is delicious with toasted pumpkin seeds (pepitas) or sunflower seeds.
  • Mix the berries! You can use blueberries, raspberries, or blackberries in addition to or instead of strawberries.
  • Cheese. I recommend feta or goat cheese to keep the creamy factor of this salad.
  • Add protein. Add cooked, grilled, or rotisserie chicken or shrimp to the strawberry orange spinach salad to make it a complete meal!

  • It's best to serve the strawberry orange salad immediately, so I recommend making just enough so you have no leftovers.
  • If you have leftovers, the salad can be refrigerated for 2 days. It's best to refrigerate the salad and the dressing separately.
